To whet the appetite, Executive Chef Alvaro Roa welcomes guests with an amuse bouche of pan-seared foie gras, brioche à tête and mango chutney. In addition to fresh seafood on ice—shucked oysters, mussels, prawns, crab and rock lobster served with a choice of condiments—hot menu highlights include grilled scallops on the half-shell with miso butter and spring onions, traditional Spanish seafood paella, grilled river prawns with seafood sauce, grilled oysters on the half-shell with ponzu and wasabi mayonnaise, a pot of steamed green mussels in a white wine reduction, and a selection of succulent sushi. Adding to the epicurean experience are live pasta, Yakitori and Takoyaki stations.
